THE BEST VEGAN MUFFINS EVER!!!!
- 2 tsp baking soda
- 1 tsp baking powder
- 1 banana
- 1 cup thawed frozen strawberries mashed
- 1/2 cup sugar
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 1 1/2 cup flour
- 1/8 cup coconut oil
- 1/4-1/2 cup soymilk (until you get a thick consistency)
Mix ingredients, add soymilk as you see fit until your mixture is thick, but pourable.
Grease the muffin tins, and pour (should make about 9 muffins).
Bake at 375 degrees for about 10-15 minutes.
Serve with earth balance vegan butter. SO YUM!
